Ingredients:
  • 1 small red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 4 slices hot pancetta (see note), finely chopped
  • 500g beef mince
  • 1 tsp dried oregano
  • 44.40 gm tomato paste
  • 250ml red wine
  • 250ml beef stock
  • 60ml tomato sauce
  • 22.00 gm sweet chilli sauce
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 400g spaghetti
  • 40.00 ml finely chopped flat-leaf parsley
  • Shaved parmesan, to serve
  • Fresh basil leaves, to serve
Instructions:
  • In a large saucepan over medium heat, heat olive oil. Sauté onion, garlic, and pancetta until onion softens slightly, about 2-3 minutes. Brown the beef for 3-4 minutes. Stir in oregano and tomato paste for 1 minute. Pour red wine, then add beef stock, tomato sauce, sweet chili sauce, and chopped tomatoes. Season with salt and pepper. Simmer on low for 30 minutes until bolognese thickens.
  • Cook the spaghetti in a saucepan of boiling salted water following the instructions on the packet, then drain and set aside.
  • Combine the drained pasta and chopped parsley with the sauce, tossing well. Serve the pasta in bowls, topped with parmesan and basil.
