Savory turkey gumbo with sweet potatoes, veggies, and spices.
Ingredients:
  • 2 teaspoons vegetable oil
  • 1 pound skinless, boneless turkey thigh meat, trimmed and cut into 1-inch pieces
  • 1 pound hot Italian-style turkey sausage links, casings removed
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • 4 garlic cloves, minced
  • 0.5 cup all-purpose flour
  • 2 cups peeled cubed sweet potato
  • 2 (14.5 ounce) cans chicken broth
  • 1 bay leaf
  • 0.5 teaspoon hot pepper sauce
Instructions:
  • In a large pot over medium heat, brown the turkey thigh pieces in vegetable oil for about 10 minutes until no longer pink. Set aside. In the same pot, crumble sausage and cook until browned for another 10 minutes.
  • Add onion, celery, and green pepper to the pot. Cook and stir until onions are translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in flour and cook until it coats the sausage and vegetables and starts to brown, 5 to 8 minutes.
  • Combine the sweet potato, thyme, oregano, chicken broth, tomatoes, and bay leaf in a pot and bring the gumbo to a boil. Lower the heat to medium-low and simmer, stirring occasionally, until thickened and the sweet potatoes are tender, for approximately 15 minutes. Next, add the cooked turkey and hot sauce, and continue to simmer until the turkey is heated through. Remember to remove the bay leaf before serving.
