Spicy pumpkin sauce coats turkey pasta for a creamy, fragrant meal perfect for chilly evenings.
Ingredients:
  • cooking spray
  • 1 medium onion, chopped
  • 1 pound lean ground turkey
  • 1.25 cups chicken broth
  • 1 cup pumpkin puree
  • 0.33333334326744 cup low-fat milk
  • 2 chipotle peppers in adobo sauce
  • 2 teaspoons white sugar
  • 2 teaspoons dried sage
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon pumpkin pie spice
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon salt
  • 1 (8 ounce) package rotini pasta
Instructions:
  • Coat a deep skillet with cooking spray. Sauté onions over medium heat until translucent, around 3 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add ground turkey and cook until fully browned, for about 8 to 10 minutes.
  • In a skillet, bring the chicken broth to a boil. Stir in pumpkin puree, milk, chipotle peppers, sugar, sage, black pepper, cinnamon, coriander, pumpkin pie spice, and nutmeg. Simmer until pasta is ready.
  • Bring a large pot of salted water to a rolling boil and add rotini. Cook until al dente, about 8 minutes. Drain well.
  • Combine the cooked pasta with the flavorful turkey-pumpkin sauce in the skillet until well mixed.
