Summer fruit and spice soup, versatile for both cocktail hour and meal time.
Ingredients:
  • 2 cups coarsely chopped tomatoes
  • 2 cups cubed fresh watermelon
  • 2 fresh red Thai chile peppers, seeded
  • 1/4 cup chopped red onion
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup shredded fresh basil leaves
Instructions:
  • Place the first 4 ingredients in a blender and blend until completely pureed.
  • Add all the remaining ingredients, excluding the basil. Cover and blend everything together until well combined. Chill in the refrigerator for about 2 hours, or until ready to serve.
  • Divide the mixture into 4 bowls, then garnish each with fresh basil leaves.
