Spicy watermelon salad with scallions and jalapenos adds a zesty kick to a classic summer dish.
Ingredients:
  • 6 cups cubed, seeded watermelon
  • 0.25 cup grapeseed oil
  • 1 cup chopped scallions
  • 2 tablespoons sliced jalapeno peppers
  • salt and ground black pepper to taste
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Transfer the refreshing watermelon into a spacious bowl.
  • In a skillet, gently warm grapeseed oil over low heat. Sauté scallions and jalapenos until fragrant, about 1 to 2 minutes. Drizzle this aromatic mixture over watermelon, season with salt and pepper, and toss gently to combine. Finish by sprinkling parsley over the salad.
