Spicy watermelon chutney with tomatoes, red onion, peppers, and curry - perfect for sandwiches or as a flavorful meat side.
Ingredients:
  • 0.25 cup oil
  • 1 red onion, minced
  • 1 red bell pepper, minced
  • 1 clove garlic, thinly sliced
  • 1 teaspoon minced fresh ginger, or to taste
  • 2 pounds watermelon, coarsely chopped
  • 1 pound tomatoes, coarsely chopped
  • 1 tablespoon lime juice, or to taste
  • 1 tablespoon curry powder
  • 1 pinch salt, or to taste
  • 1 pinch white sugar, or to taste
Instructions:
  • In a stockpot over medium heat, sauté red onion, red bell pepper, garlic, and ginger in oil until tender, approximately 5 minutes.
  • Combine the watermelon, tomatoes, lime juice, curry powder, salt, and sugar with the onion mixture and bring to a boil. Simmer over medium-low heat, uncovered, until the watermelon and tomatoes slightly break down, for about 10 minutes.
  • Ladle chutney into 4 jars, seal tightly, and gently invert for 5 minutes to combine flavors. Return upright and refrigerate.
