Whip up delicious pumpkin pancakes for a cozy fall breakfast with Gold Medal® flour. Your family will adore the spicy-sweet flavors!
Ingredients:
  • 2 eggs, slightly beaten
  • 1/4 cup sugar
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup maple-flavored syrup
Instructions:
  • Combine eggs, sugar, milk, oil, and vanilla in a large bowl until fully incorporated. Gently fold in all remaining ingredients, excluding the syrup, until just combined.
  • Prepare a 1-quart pitcher or bowl by lining it with a gallon-size resealable plastic bag. Pour the batter into the bag, seal it while pressing out the air.
  • Preheat a large nonstick electric griddle to 375°F or heat a 12-inch nonstick skillet over medium heat.
  • 1. Grease a hot griddle with oil. 2. Cut a 1/4-inch hole in one bottom corner of the bag. 3. Gently squeeze the bag to pipe about 2 tablespoons of batter onto the griddle in a 4-inch spider web shape for each pancake. 4. Cook for 1 to 2 minutes or until the pancakes are puffed and dry around the edges. 5. Flip the pancakes and cook for about 1 minute longer or until the other side is golden brown. 6. Serve with syrup.
