Ingredients:
  • 80ml olive oil
  • 60ml lemon juice
  • 42.00 gm light soy sauce
  • 100g baby spinach leaves
  • 200g button mushrooms, thinly sliced
  • 1 baby fennel, very thinly sliced
  • 1 small red onion, thinly sliced
Instructions:
  • In a large bowl, whisk together the oil, lemon juice, and soy sauce. Add the spinach leaves, mushrooms, fennel, and onion, gently toss to combine.
