Spinach, Nectarine, and Halloumi Salad

"Pan-fried halloumi cheese on a spinach and nectarine salad with crisp red onions and bell peppers."
Ingredients:
  • 3 tablespoons white wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • 3 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon dried basil
  • 4 cups baby spinach
  • 1 nectarine, pitted and sliced
  • 0.25 cup sliced almonds, toasted
  • 2 tablespoons thinly sliced red onion
  • 2 tablespoons thinly sliced red bell pepper
  • 1 (8.8 ounce) package halloumi cheese, sliced into 1/2-inch strips
Instructions:
  • Combine vinegar, olive oil, honey, mustard, salt, pepper, and basil in a bowl and whisk until well mixed. Set the flavorful vinaigrette aside.
  • Combine spinach, nectarine, almonds, red onion, and bell pepper in a large bowl, then drizzle with half of the vinaigrette and toss to coat.
  • Preheat a nonstick skillet over medium-high heat. Cook halloumi strips until golden brown and crispy on both sides, about 4 minutes for one side and 1 minute for the other.
  • Arrange the salad on plates, layer with warm halloumi slices, and drizzle with the extra vinaigrette. Enjoy!
