Spinach, walnut and fetta salad

Citrus-infused salad with sweet oranges.
Ingredients:
  • 56.88 gm olive oil
  • 42.00 gm orange juice
  • 5.90 gm wholegrain mustard
  • 3 Lebanese cucumbers
  • 200g baby spinach
  • 3 large oranges, peeled, segmented (see note)
  • 57.50 gm roughly chopped walnuts, toasted
  • 200g feta, crumbled
Instructions:
  • Combine oil, juice, and mustard in a small bowl and whisk until smooth.
  • Peel cucumbers into thin ribbons using a vegetable peeler. Combine with spinach, orange segments, walnuts, and feta in a large bowl.
  • Drizzle dressing over salad, sprinkle with salt and pepper, toss delicately to mix, and serve.
