Citrus Spinach Salad with Feta and Cranberry Dressing

Bright citrus salad with spinach, feta, walnuts, and cranberry dressing.
Ingredients:
  • 0.5 cup coarsely chopped walnuts
  • 1 orange
  • 2 pink grapefruit
  • 1 (5 ounce) package baby spinach leaves
  • 0.5 cup crumbled feta cheese
  • 2 tablespoons cranberry juice, or as needed
  • 0.5 cup olive oil
  • 2 tablespoons turbinado sugar (such as Sugar in the Raw®)
  • 1 teaspoon dried parsley
  • 0.5 teaspoon kosher salt
Instructions:
  • First, heat the oven to a toasty 350 degrees F (175 degrees C). Then, evenly lay out the walnuts on a baking sheet.
  • Bake in the preheated oven until beautifully golden and fragrant, for 4 to 5 minutes. Then, set aside.
  • Zest the orange and set aside. Trim off the tops and bottoms of the grapefruit, then cut along the curves, top-down, to remove the skins and piths. Repeat the same process with the orange. Arrange the fruits in segments on a plate or shallow bowl, separating them from the membranes and preserving any additional juices for the dressing. Gently press the segments to extract more juice.
  • Mix together the toasted walnuts, spinach, feta cheese, and grapefruit and orange slices in a large bowl.
  • Combine grapefruit and orange juices with cranberry juice to measure 1/3 cup in a measuring cup. Whisk in olive oil, turbinado sugar, 1 teaspoon of reserved orange zest, parsley, and kosher salt until dressing thickens. Pour over salad and top with any extra orange zest for garnish.
