Whip up a vibrant citrus spinach salad with pecans and fresh fruits.
Ingredients:
  • 1/4 cup coarsely chopped pecans
  • 2 teaspoons real maple syrup
  • 1/2 teaspoon sugar
  • 2 tablespoons fresh orange juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon olive or vegetable oil
  • 2 teaspoons sugar
  • 4 cups torn fresh spinach leaves
  • 1 cup fresh blueberries
  • 2 medium oranges, peeled, cut into sections (about 1/2 cup)
Instructions:
  • Preheat oven to 350°F. Cover a cookie sheet with foil. Coat pecans with syrup in a small bowl until fully coated. Spread pecans on the foil, sprinkle with 1/2 teaspoon sugar. Bake for 7 to 9 minutes, stirring occasionally until pecans are lightly toasted. Let cool for about 15 minutes before serving.
  • In a small bowl, whisk together orange juice, vinegar, oil, and 2 teaspoons of sugar until smooth and combined.
  • Combine fresh spinach leaves, ripe blueberries, and juicy orange sections in a spacious bowl. Drizzle the delectable dressing over the salad and mix everything together. Finish by sprinkling crunchy pecans on top before serving promptly.
