Ingredients:
  • 60g (1/2 cup) walnut pieces
  • 20.00 ml red wine vinegar
  • Salt & freshly ground black pepper
  • 200g baby spinach leaves, washed, dried
  • 120g semi-dried tomatoes
  • 100g blue cheese (Roaring Forties Blue, King Island brand), crumbled
Instructions:
  • Preheat your oven to 180°C. Spread walnuts on a baking tray and bake for 5-8 minutes until fragrant and golden. Coarsely chop them after toasting.
  • In a small screw-top jar, mix the walnuts, oil, and vinegar. Shake vigorously to blend flavors. Season with salt and pepper to taste.
  • Combine fresh spinach, ripe tomatoes, and tangy blue cheese in a large bowl. Drizzle with flavorful walnut dressing and gently toss to coat. Serve immediately for a delicious salad.
