Blue cheese, apple and spinach pasta salad

Elevate pasta salad with blue cheese, apple, and spinach for a refreshing summer dish.
Ingredients:
  • 1000.00 ml penne rigate
  • 80g baby spinach
  • 2 jazz, gala or pink lady apples, cut into 2cm pieces
  • 82.50 ml flaked almonds, toasted
  • 4 green onions, thinly sliced
  • 100g mild blue cheese, crumbled
  • 62.50 ml red wine vinegar
Instructions:
  • Boil the pasta in a saucepan of salted water according to the package instructions until tender. Drain, rinse under cold water, and transfer to a large bowl.
  • Combine spinach, apple, almonds, onion, and cheese with cooled pasta. Whisk vinegar and oil together in a jug, then pour over the pasta. Season with salt and pepper, toss gently to combine, and serve.
