Spinach and chicken make a delicious and easy weeknight dinner.
Ingredients:
  • 6 boneless skinless chicken breasts (1 3/4 lb)
  • 1 cup fat-free (skim) milk
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 medium onion, chopped (1/2 cup)
  • 1 bag (10 oz) washed fresh spinach, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground nutmeg
Instructions:
  • In a well-oiled 12-inch skillet over medium heat, sear chicken for 2 minutes on each side. Reduce heat to medium-low and add milk, broth, and onion. Simmer for about 5 minutes, rotating chicken until onion is tender.
  • Add the spinach and cook for 3 to 4 minutes, stirring occasionally until the spinach wilts completely and the chicken reaches an internal temperature of 170°F. Remove the chicken from the skillet and set aside to keep warm.
  • Turn up the heat to medium. Cook the spinach mixture for about 3 minutes, or until most of the liquid has cooked off. Stir in the salt, pepper, and nutmeg. Plate the chicken on top of the flavorful spinach.
