Delicious spinach and corn pastries, perfect for snacking or entertaining.
Ingredients:
  • 18.40 gm oil
  • 1 small onion, finely chopped
  • 2 x 310g can creamed corn
  • 250g frozen spinach, thawed, drained
  • 60g crumbled feta
  • 3 sheets ready-rolled puff pastry
  • 41.20 gm milk
  • Sea salt, sesame seeds or grated parmesan, for sprinkling
  • Salad, sweet chilli sauce, to serve
Instructions:
  • Preheat your oven to a toasty 200°C and line 2 oven trays with baking paper.
  • In a large frying pan over high heat, heat oil. Saute potato until lightly browned for 4-5 minutes. Add onion and saute until tender for another 2-3 minutes.
  • Combine the potato mixture with corn, spinach, and feta in a bowl. Season to your liking.
  • Cut the pastry sheets into quarters diagonally. Place the filling on one side of each triangle. Fold the pastry in half, pressing the edges with a fork to seal the filling inside.
  • Lay out on trays. Lightly coat with milk and sprinkle with salt, sesame seeds, or parmesan. Bake until puffed and golden, about 25-30 minutes. Enjoy with a side of salad and sweet chili sauce.
