Spinach and feta triangles

Impress any crowd with these irresistible feta and spinach pastries, perfect for parties.
Ingredients:
  • 1 small brown onion, finely chopped
  • 2 bunches English spinach, trimmed, chopped
  • 100g feta, crumbled
  • 20.00 ml finely chopped fresh dill
  • 1 tsp finely grated lemon rind
  • 15 sheets filo pastry
  • 125g butter, melted
Instructions:
  • In a large frying pan over medium-high heat, add oil, onion, and garlic. Sauté for 3 minutes until the onion softens. Stir in spinach and cook for 6 minutes until wilted. Transfer the mixture to a colander and let cool for 10 minutes.
  • Preheat your oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper. Transfer the spinach mixture into a large bowl and combine it with feta, dill, and lemon rind. Season the mixture with salt and pepper to taste.
  • Lay down 1 sheet of filo on a flat surface. Spread with butter. Add another sheet of filo on top. Repeat with one more sheet of filo. Cut into 3 long strips. Cover the rest of the filo with a damp tea towel.
  • Spread a generous tablespoon of the spinach mixture on one corner of the pastry sheet. Fold the pastry over diagonally to create a triangle shape. Continue folding to maintain the triangle shape. Place on a baking tray and repeat with the remaining filo, butter, and spinach mixture. Brush the triangles with the remaining butter. Bake for 25 minutes until golden and crispy. Serve and enjoy!
