Irresistible spinach, feta, and cottage cheese filled pastries.
Ingredients:
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
  • 1 teaspoon salt
  • 1 (4 ounce) package feta cheese, crumbled
  • 0.5 cup cottage cheese
  • 1 egg, beaten
  • 1 (16 ounce) package phyllo dough
  • 1 cup unsalted butter, melted
Instructions:
  • In a medium saucepan over medium heat, sauté onion in olive oil until tender, about 5 minutes. Add spinach and salt, then mix in feta cheese, cottage cheese, and egg. Continue to cook and stir until thickened, about 5 to 10 minutes. Reduce heat to simmer.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Lay out phyllo dough sheets individually on a flat surface. Brush each sheet with unsalted butter. Cut into 5-inch wide strips. Spoon 1 tablespoon of the onion, spinach, and feta mixture onto one end of each strip. Fold the end over the filling to create a triangle shape. Repeat folding the strip into triangles until a small stuffed pastry is formed. Brush with more unsalted butter. Repeat the process with the rest of the phyllo dough.
  • Place the stuffed triangles on a spacious baking sheet and bake in the preheated oven for 12-15 minutes, or until they turn golden brown. Serve while warm.
