Indulgent cheddar, mushroom, and spinach stuffed tortillas. Served with guacamole and sour cream for a delicious meal.
Ingredients:
  • 1 (10 ounce) package chopped spinach
  • 2 cups shredded Cheddar cheese
  • 2 tablespoons butter
  • 2 cloves garlic, sliced
  • 2 portobello mushroom caps, sliced
  • 4 (10 inch) flour tortillas
  • 1 tablespoon vegetable oil
Instructions:
  • Cook the spinach as instructed on the package, then drain and gently pat dry.
  • Preheat your oven to 350 degrees F (175 degrees C). Scatter 1/2 cup of cheese over one side of each tortilla. Arrange the tortillas with cheese side facing up on baking sheets. Bake for 5 minutes until the cheese is perfectly melted.
  • In a skillet over medium heat, melt butter until sizzling. Add garlic and mushrooms, stirring occasionally, for 5 minutes. Mix in spinach and cook for another 5 minutes. Spread an equal portion of the mixture onto the cheese side of each tortilla. Fold the tortillas in half to cover the flavorful filling.
  • In a separate skillet over medium heat, warm oil. Add quesadillas one at a time and cook for 3 minutes per side until golden brown. Cut each quesadilla into 4 wedges before serving.
