Tangy orzo pasta salad with feta, spinach, pine nuts, and balsamic dressing.
Ingredients:
  • 1 (16 ounce) package uncooked orzo pasta
  • 1 (10 ounce) package baby spinach leaves, finely chopped
  • 0.5 pound crumbled feta cheese
  • 0.5 red onion, finely chopped
  • 0.75 cup pine nuts
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon ground white pepper
  • 0.5 cup olive oil
  • 0.5 cup balsamic vinegar
Instructions:
  • 1. Boil a pot of water seasoned with a pinch of salt. Cook orzo until al dente for 8-10 minutes, then drain and rinse under cold water. Combine in a bowl with spinach, feta, onion, pine nuts, basil, and white pepper. Mix in olive oil and balsamic vinegar. Chill and enjoy cold.
