Try this quick and nutritious spinach salad with pine nuts for a delicious weeknight dinner option.
Ingredients:
  • 2 eggs
  • 2 middle rashers bacon, fat trimmed, cut crossways into 3
  • 1 x 50g pkt pine nuts
  • 125g (1/2 cup) good-quality whole-egg mayonnaise
  • 30.00 gm water
  • 1 x 150g pkt baby spinach leaves
Instructions:
  • 1. Place eggs in a saucepan and cover with water. 2. Bring to a boil over high heat, then simmer for 6-7 minutes. 3. Rinse eggs under cold water, peel, and cut into wedges.
  • Heat a non-stick frying pan over high heat. Cook bacon until crispy, about 4-5 minutes. Transfer bacon to a paper towel. Toast pine nuts in the same pan by stirring for 1-2 minutes.
  • Combine bacon, mayonnaise, and water in a food processor bowl. Process until bacon is finely chopped.
  • Place a bed of fresh spinach leaves on individual serving plates. Add a poached egg on top, sprinkle with pine nuts, and generously drizzle with creamy bacon dressing.
