Spinach and Sun-Dried Tomato Pasta

Try my delicious Sicilian-style pasta with sun-dried tomatoes.
Ingredients:
  • 1 cup vegetable broth
  • 12 dehydrated sun-dried tomatoes
  • 1 (8 ounce) package uncooked penne pasta
  • 2 tablespoons pine nuts
  • 1 tablespoon olive oil
  • 0.25 teaspoon crushed red pepper flakes
  • 1 clove garlic, minced
  • 1 bunch fresh spinach, rinsed and torn into bite-size pieces
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Bring the broth to a boil in a small saucepan, then remove from heat. Let the sun-dried tomatoes soften in the broth for about 15 minutes. Drain and coarsely chop, reserving the flavorful broth for later use.
  • Boil a pot of salted water. Add penne pasta and cook until al dente, about 9 to 12 minutes. Drain the pasta.
  • Toast pine nuts in a skillet over medium heat until golden brown, stirring occasionally.
  • In a skillet over medium heat, warm the olive oil with red pepper flakes, then saute the garlic until tender, about 1 minute. Add the spinach and cook until almost wilted. Stir in the reserved broth and chopped sun-dried tomatoes, cooking for an additional 2 minutes until heated through.
  • Combine the cooked pasta with the spinach, tomatoes, and pine nuts in a large bowl. Garnish with Parmesan cheese before serving.
