Spinach & tortellini soup

Ingredients:
  • 1 litre organic chicken or vegetable stock
  • 2 fresh bay leaves
  • 200 g tortellini
  • 50 g frozen peas
  • 1 large handful of spinach
Instructions:
  • In a large pot, combine the stock and bay leaves, bring to a boil. Stir in the tortellini and cook for 4 minutes. Add the peas and cook for an additional 3 minutes. Finally, add the spinach and cook until wilted. Serve in bowls with crusty bread on the side. Enjoy!
