Cheesy spinach dip blended with bell peppers, onions, and tomatoes, served warm with crispy tortilla chips.
Ingredients:
  • 2.5 pounds shredded pepper Jack cheese
  • 1.25 cups whole milk
  • 0.5 pound sweet onions, minced
  • 0.5 pound tomatoes, seeded and chopped
  • 0.5 (10 ounce) package frozen chopped spinach, thawed and drained
  • 0.5 large red bell pepper, minced
Instructions:
  • In a double boiler set over simmering water, melt pepper Jack cheese with milk. Stir often and use a rubber spatula to scrape down the sides to prevent scorching. This should take around 5 minutes until the cheese incorporates smoothly with the milk.
  • Combine onions, tomatoes, spinach, and red bell pepper with the cheese mixture. Simmer covered until dip is thickened and flavors have melded, around 15 minutes.
