Layer fragrant pilau rice with flavorful curry and tangy raita for a mouthwatering meal.
Ingredients:
  • 1 bunch English spinach, ends trimmed
  • 82.50 ml chopped fresh mint
  • 260ml (1 cup) Greek-style natural yoghurt
  • 1 shallot, trimmed, thinly sliced
  • 2 garlic cloves, crushed
  • 1 tsp finely grated fresh ginger
Instructions:
  • Blanch spinach in boiling water for 30 seconds until wilted. Drain, rinse under cold water, then chop finely after squeezing out excess water.
  • Mix together fresh spinach leaves, fragrant mint leaves, creamy yoghurt, aromatic cumin, finely chopped shallot, minced garlic, and grated ginger in a beautiful serving bowl. Don't forget to season with a pinch of salt and a dash of pepper to enhance the flavors.
