Delicious vegetarian spinach and feta puff pastry rolls - perfect for entertaining or a casual get-together.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced, or more to taste
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • salt to taste
  • 1 (4 ounce) package crumbled feta cheese
  • 3 sheets frozen puff pastry, thawed
  • 1 large egg, beaten
  • 1 tablespoon milk
  • 2 tablespoons sesame seeds
Instructions:
  • In a skillet over medium heat, sauté garlic until fragrant for 1 to 2 minutes. Add spinach and cook until warmed through for 3 to 5 minutes. Season with salt, then mix in feta cheese until well combined before transferring to a bowl.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and grease 2 baking sheets.
  • Place a sheet of puff pastry on a floured surface, cut it in half lengthwise, and roll one half out with a rolling pin until wide enough to fold twice lengthwise. Combine egg and milk in a small bowl.
  • Spread a generous portion of the spinach mixture along the center of the puff pastry, creating a delightful filling. Gently roll one side over the luscious mixture and brush the other side with the egg mixture for a golden finish. Carefully roll the pastry again to securely seal in all the delicious flavors.
  • Brush the top of each roll with the egg mixture and generously sprinkle with sesame seeds. Cut each roll into 6 equal-sized pieces and transfer to the prepared baking sheets.
  • Bake until the spinach rolls are puffed up and golden, about 20-25 minutes in the preheated oven.
