Spinach Salad with Peaches and Pecans

Summery peach salad with baby spinach, toasted pecans, and poppyseed dressing.
Ingredients:
  • 0.75 cup pecans
  • 2 ripe peaches
  • 4 cups baby spinach, rinsed and dried
  • 0.25 cup poppyseed salad dressing
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Spread pecans in an even layer on a baking sheet and bake in a preheated oven until they start to turn slightly darker, around 7 to 10 minutes. Take out of the oven and keep aside.
  • If desired, peel the peaches and slice them into bite-sized segments. Combine the peaches, spinach, and pecans in a large bowl.
  • Coat with dressing until well mixed, adding more if needed for extra flavor.
