Spinach-Shrimp Pizza

Try a quick and tasty shrimp and spinach pita pizza for dinner tonight - ready in 30 minutes!
Ingredients:
  • 4 whole-grain pita breads (6 inch)
  • 1 container (4 oz) reduced-fat garlic-and-herbs spreadable cheese
  • 1 tablespoon fat-free (skim) milk
  • 1 cup lightly packed spinach leaves, coarsely chopped
  • 2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
  • 1 cup sliced fresh mushrooms
  • 2/3 cup chopped tomato
  • 1/2 cup frozen cooked salad shrimp (from 4-oz bag), thawed, well drained
  • 1/2 cup shredded mozzarella cheese (2 oz)
  • 2 tablespoons finely shredded Parmesan cheese
Instructions:
  • Preheat oven to 400°F. Place pita breads on a large cookie sheet.
  • In a small bowl, combine the cheese and milk, then mix in the spinach and basil. Spread evenly over each pita bread, leaving a 1/2 inch border. Top with mushrooms, tomato, shrimp, and additional cheese.
  • Bake until the cheese is gooey and melted, about 10 to 15 minutes.
