Fall-inspired butternut squash and potato patties, stuffed with spinach and pan-fried to perfection, make a delectable appetizer for any gathering.
Ingredients:
  • 1 butternut squash - peeled, halved, seeded, and grated
  • 1 potato, peeled and grated
  • 0.5 onion, peeled and grated
  • 1 teaspoon salt, or to taste
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon baking powder
  • 4 cups chopped fresh spinach
Instructions:
  • In a large bowl, mix together the butternut squash, potato, onion, and salt. Allow it to rest for 10 minutes to draw out moisture. Then, transfer the mixture to a colander and press out any excess moisture.
  • Combine the squash mixture with flour, egg, black pepper, and baking powder in a bowl, ensuring everything is thoroughly mixed.
  • In a skillet over medium heat, heat 1 tablespoon olive oil and sauté spinach until wilted, about 2 minutes. Season with salt and pepper before transferring to a bowl.
  • Take 1 1/2 tablespoons of squash mixture and shape it into a small ball with your hands. Flatten into a patty. Add 1 teaspoon of spinach onto the patty, then shape the patty around the spinach into a ball. Flatten the ball with your palms. Repeat with the rest of the squash mixture and spinach to make 12 to 14 more spinach-stuffed patties.
  • In a large skillet over medium heat, sear patties in 1 tablespoon of olive oil until golden brown on both sides, about 4 to 5 minutes. Transfer cooked patties to a plate and continue with the remaining oil and patties.
