Spinach-Topped Buffalo Chicken

Make a quick and delicious Buffalo chicken topped with spinach and blue cheese using Bisquick Heart Smart® mix in just 25 minutes.
Ingredients:
  • 4 boneless skinless chicken breasts (1 1/4 lb)
  • 1 egg
  • 1/3 cup Frank's™ RedHot™ Buffalo Wings Sauce
  • 1/2 cup Bisquick Heart Smart® mix
  • 2 tablespoons cornmeal
  • 2 teaspoons Italian seasoning
  • 2 tablespoons vegetable oil
  • 2 tablespoons French dressing
  • 1 cup packed fresh baby spinach
  • 1/4 cup crumbled blue cheese (1 oz)
Instructions:
  • Place each chicken breast between plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until about 1/4 inch thick.
  • First, whisk together an egg and 2 tablespoons of zesty Buffalo wing sauce in a shallow dish. In a separate shallow dish, combine Bisquick mix, cornmeal, and aromatic Italian seasoning. Dip the chicken into the egg mixture, then generously coat it with the Bisquick mixture.
  • Heat oil in a 12-inch skillet over medium-high heat. Cook chicken for 6 to 10 minutes, flipping once, until golden brown on the outside and fully cooked inside.
  • In a small bowl, combine the remaining Buffalo wing sauce with the French dressing. Place 1/4 cup spinach and 1 tablespoon cheese on top of each chicken breast. Finish by drizzling each with 2 tablespoons of the dressing mixture.
