Spirali with prawns, roasted tomatoes & feta

Indulge in exquisite prawn pasta.
Ingredients:
  • 600g grape tomatoes or small cherry tomatoes, halved
  • 125ml (1/2 cup) olive oil
  • 500g spirali (spiral) pasta or other short pasta
  • 3 cloves garlic, thinly sliced
  • 800g green king prawns, (see note) peeled with tails intact, cleaned
  • 50g currants, soaked in 2 tbsp red wine vinegar
  • 20.00 ml finely chopped marjoram or oregano
  • 100g (1/2 cup) feta, crumbled
  • 40g (1/2 cup) flaked almonds, roasted
Instructions:
  • Preheat your oven to 190°C. Arrange tomatoes, cut-side up, on a large baking tray. Drizzle with 80ml (1/3 cup) oil, season with salt and pepper, then roast for 40 minutes until slightly shrivelled.
  • Boil pasta in salted water until perfectly cooked. Drain well.
  • Heat the remaining 2 tablespoons of oil in a large frying pan over medium-high heat. Cook garlic and prawns for 1 minute on each side until prawns are just cooked. Stir in roasted tomatoes and currants with any remaining vinegar, and warm for 1 minute. Lower the heat to medium, add pasta and cook for a further 2 minutes, tossing until everything is warmed through.
  • Serve the pasta in individual bowls, garnished with marjoram, feta, and almonds for a delightful presentation.
