Classic split pea soup with ham and vegetables for a comforting and hearty meal.
Ingredients:
  • 1 cup chopped onion
  • 1 teaspoon vegetable oil
  • 1 pound dried split peas
  • 1 pound ham bone
  • 1 pinch salt and pepper to taste
Instructions:
  • In a medium pot, caramelize the onions in oil until golden brown. Stir in the split peas, ham bone, and just enough water to cover everything, then generously season with salt and pepper.
  • Simmer with lid on for 2 hours until peas dissolve into a flavorful green liquid. Occasionally check and add water if needed as soup cooks.
  • Remove the green soup from the heat and allow it to naturally thicken. Reheat gently if necessary before serving.
