Ingredients:
  • 1 pound leftover ham bone with meat attached
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 teaspoons freshly ground black pepper
  • 1 pound dried split peas
  • 1 cup chopped carrots
Instructions:
  • In a large pot over high heat, place the ham bone, add enough water to cover, bring to a boil. Reduce to low heat and simmer overnight. Once cooled, clean the stock by removing the bone, excess fat, and any cartilage. Add the good ham meat back to the pot and bring to a boil.
  • Simmer the onion, garlic, and ground black pepper for 1 hour. Add the split peas and carrots and simmer for at least another hour until the peas break down. Stir well and season to taste.
