Spring salad with strawberries, spinach, bacon, eggs, and vinaigrette.
Ingredients:
  • 4 slices bacon
  • 5 cups fresh spinach, rinsed and torn into bite-size pieces
  • 0.5 cup sliced fresh mushrooms
  • 1 cup sliced fresh strawberries
  • 0.5 cup thinly sliced onion
  • 1 kiwi, sliced
  • 0.5 mandarin orange, peeled and segmented
  • 0.25 cup ketchup
  • 0.25 cup water
  • 0.25 cup olive oil
  • 0.25 cup brown sugar
  • 2 tablespoons cider vinegar
  • 0.5 teaspoon spicy brown mustard
  • 1 dash garlic powder
  • 1 cup seasoned croutons
Instructions:
  • Gently simmer the eggs in a saucepan filled with cold water until they come to a boil. Turn off the heat, cover, and let the eggs steep in the hot water for 12 to 15 minutes. Transfer the eggs to cool water, peel, chop, and set aside.
  • Crisp and evenly brown the bacon in a skillet over medium-high heat. Drain, crumble, and set aside.
  • Combine eggs, bacon, spinach, mushrooms, strawberries, onion, kiwi, and orange in a large bowl.
  • Combine ketchup, water, olive oil, brown sugar, cider vinegar, and brown mustard in a bowl. Season with garlic powder, salt, and pepper. Drizzle the dressing over the salad and finish with croutons.
