Decadent butternut squash dip with goat cheese, roasted garlic, and walnuts. Perfect for elegant Fall gatherings. Serve with chips or crusty bread.
Ingredients:
  • 1 medium butternut squash, halved and seeded
  • 1 whole head garlic
  • 1 (11 ounce) log goat cheese
  • 1 lemon, juiced
  • 0.25 cup finely chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Brush the cut side of the squash halves with olive oil and place them cut side down on a baking sheet. Drizzle the top of the head of garlic with olive oil, wrap it in aluminum foil, and place it on the baking sheet with the squash.
  • Bake the squash for 40 minutes or until fork-tender. Remove the squash from the skin and place in a serving bowl. Squeeze the roasted garlic into the bowl and mash until smooth. Mix in goat cheese and lemon juice until well combined. Top with walnuts and serve warm or at room temperature.
