Butternut Squash Potstickers

Delicious vegetarian wonton dumplings filled with butternut squash and scallions, paired with a savory sesame-soy dipping sauce.
Ingredients:
  • 1 butternut squash, halved lengthwise and seeded
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 scallions, white and pale green parts only, thinly sliced
  • 1 teaspoon ginger
  • 20 wonton wrappers
  • 0.25 cup vegetable oil, divided
  • 1 cup water, divided
  • 0.5 cup soy sauce
  • 0.25 cup water
  • 0.25 teaspoon sesame seeds
Instructions:
  • Lay the butternut squash halves cut-side down in a dish and cover them with plastic wrap.
  • Cook the squash in the microwave for 12 minutes until the flesh is tender. Let it cool for 5 to 10 minutes before handling.
  • Transfer the squash flesh to a large bowl, leaving the skin behind. Combine brown sugar and 2 tablespoons of soy sauce with the squash. Add scallions and ginger, and mix well.
  • Place 1 tablespoon of the delectable squash mixture onto the middle of a wonton wrapper. Dampen the edges with water and elegantly fold into a triangle. Repeat this process with the rest of the wonton wrappers. Display the filled potstickers on a baking sheet for baking.
  • Chill potstickers until firm, approximately 15 minutes.
  • In a large skillet over medium heat, heat 2 tablespoons of oil until shimmering. Place a layer of potstickers in the skillet and cook until the bottoms are golden, approximately 2 minutes. Flip the potstickers and pour in 1/2 cup of water. Cover and steam for about 3 minutes until cooked through. Transfer to a serving dish and repeat the process with the remaining oil and potstickers.
  • Combine 1/2 cup soy sauce, water, and sesame seeds in a small bowl to create a flavorful dipping sauce for the potstickers. Serve it alongside the potstickers for a delicious pairing.
