Try these festive berry jam bars for a red, white, and blue Fourth of July treat.
Ingredients:
  • 1 cup granulated sugar
  • 1 cup butter or margarine, softened
  • 1 tablespoon vanilla
  • 2 eggs
  • 2 2/3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 3 tablespoons seedless blackberry jam or grape jelly
  • 3/4 cup seedless strawberry jam or red currant jelly
  • Powdered sugar, if desired
Instructions:
  • - Preheat the oven to 350°F. Grease the bottom and sides of a 15 1/2x10 1/2x1 inch jelly roll pan with shortening. - In a medium bowl, mix granulated sugar, butter, vanilla, and eggs with a spoon. - Add flour and baking powder to the mixture and stir until a dough forms. - Set aside 1/4 cup of the dough, cover, and refrigerate. - Press the remaining dough evenly into the pan using floured hands.
  • Create a flag design by outlining a 6x5-inch rectangle in the upper left corner of the pan with a toothpick for the "star" area. Fill the 6x5-inch area with blackberry jam. Beginning 1/4 inch from the top of the "flag" (long side of the pan), press a 1/2-inch-wide and 1/4-inch-deep groove into the dough using the end of a wooden spoon or your finger to mark the stripes. Create 7 more grooves, each around 3/4 inch apart. Place strawberry jam in a resealable plastic food-storage bag, cut off the tip, and squeeze the jam into the grooves.
  • Roll out the dough to 1/8-inch thickness on a lightly floured surface. Use a small star-shaped cutter to create stars, then place them on top of the blackberry jam.
  • Bake until golden brown, approximately 18 to 22 minutes. Allow to cool for about 1 hour. Dust with powdered sugar and slice into 8 rows by 7 rows to make bars.
