Impress your neighbors with delicious, moist zucchini bread made from your abundant zucchini harvest.
Ingredients:
  • 3 cups Gold Medal™ all-purpose flour
  • 2 cups shredded zucchini
  • 1 1/2 cups packed brown sugar
  • 2/3 cup vegetable oil
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 4 eggs
Instructions:
  • Preheat the oven to 350°F and generously coat a 12-cup star-shaped bundt cake pan with cooking spray.
  • Blend all ingredients together until fully incorporated, then transfer the mixture into a pan.
  • Bake for 45 to 55 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes. Invert pan onto a wire rack and let the cake release.
