Delicious veggie quiche with zucchini, carrots, and cheese - a stunning low-calorie star for your dinner gathering.
Ingredients:
  • 200g ctn crème fraîche
  • 160ml (2/3 cup) thickened cream
  • 70g (1 cup) shredded chilli pecorino or chilli cheddar (see notes)
  • 4 eggs
  • 20.00 ml chopped fresh chives
  • 10 sheets filo pastry
  • 80g butter, melted
  • 4 (about 470g) zucchini, peeled into ribbons
  • 4 (about 350g) carrots, peeled into ribbons
Instructions:
  • Preheat your oven to 180C/160C fan forced. Mix crème fraîche, cream, chilli pecorino, eggs, and chives in a jug, season with salt and pepper, then pour the mixture into a 5cm-deep, 24.5cm round ovenproof dish.
  • Lay one filo sheet on a clean surface and brush lightly with melted butter. Continue layering four more filo sheets, brushing each with butter. Cut the stack into eleven 3.5cm-thick strips. Repeat with the remaining filo and butter to make a total of 22 filo strips.
  • Layer one filo strip with a handful of zucchini strips, slightly overlapping them. Add a layer of carrot strips. Roll up the vegetable and filo strip into a spiral, placing it in the center of the crème fraîche mixture. Continue layering filo strips, zucchini, and carrot, adding each one to the spiral in the center, gradually building outwards until you reach the edge of the dish. Bake for 1 hour until golden and set in the middle. Serve at room temperature.
