Elevate zucchini by transforming it into tasty nachos for a unique twist on a classic snack. Let's make veggies the star of the show!
Ingredients:
  • 1 large zucchini, sliced
  • cooking spray
  • 1 (1 ounce) package taco seasoning mix
  • 2 tablespoons sliced black olives
  • 2 tablespoons chopped red onion
  • 8 slices pickled jalapeno pepper
  • 1 cup shredded Cheddar cheese
Instructions:
  • Trim the ends off the zucchini. Use a mandoline on the thinnest setting to slice the zucchini into 1/8-inch slices. Pat the slices dry between paper towels to remove excess moisture.
  • Place zucchini slices on a cutting board and lightly spray with cooking spray. Flip over and season with taco seasoning, then spray lightly again. Transfer seasoned slices to a microwave-safe plate without overlapping. Microwave on high for 2 minutes and 30 seconds. Flip the slices carefully and microwave for an additional 30 seconds. Repeat with the rest of the zucchini slices.
  • Spread chips evenly onto 2 microwave-safe plates. Top with black olives, red onion, jalapeno peppers, and Cheddar cheese. Microwave on high power for about 30 seconds, until cheese is melted.
