Whimsical starfish cookies with oats, dark chocolate, dates, and walnuts for a delicious under-the-sea treat!
Ingredients:
  • 100g unsalted butter
  • 80g caster sugar
  • 80g brown sugar
  • 80g plain flour
  • 2.00 gm baking powder
  • 80ml (1/3 cup) milk
  • 50g chopped walnuts, lightly roasted
  • 100g good-quality dark chocolate, chopped
  • 150g rolled oats
  • 20g pitted dates, chopped
Instructions:
  • Preheat the oven to 190°C and prepare two large baking trays by lining them with non-stick baking paper.
  • Mix together softened butter and sugars until light and fluffy. Incorporate the egg and vanilla into the mixture. Sift in the flour, baking powder, and a pinch of salt. Pour in the milk, then fold in the nuts, chocolate, oats, and dates.
  • Shape the mixture into 12 balls, then mold them into 12 starfish shapes with damp hands. Place onto trays and bake for 12-15 minutes. Let cool before serving.
