Chicken nuggets with starfish chips

"Wow the kids at your party with irresistible homemade chicken nuggets!"
Ingredients:
  • 500g chicken mince
  • 1 garlic clove, crushed
  • 1 tsp all purpose seasoning
  • 312.50 ml panko breadcrumbs
  • 2kg large sebago potatoes, peeled
  • Olive oil cooking spray
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and line 2 large baking trays with baking paper. In a large bowl, mix together the chicken, garlic, seasoning, and 1/2 cup breadcrumbs.
  • Spread the remaining breadcrumbs on a large plate. Shape level tablespoons of the mixture into 32 nuggets. Roll each nugget in the breadcrumbs and place on a prepared tray. Cover and refrigerate for 20 minutes.
  • In a large saucepan, cover the potatoes with cold water and bring to a boil over high heat. Reduce to medium heat and cook uncovered until potatoes are just tender, about 10 minutes. Drain and let cool for 5 minutes.
  • Slice potatoes into 1cm-thick slices, then use a 5cm star-shaped cutter to create potato stars. Place on a baking tray, spray with oil, and bake for 20 minutes. Flip chips over, add nuggets to the tray, and bake for an additional 30 minutes until the chips are golden and nuggets are fully cooked. Serve and enjoy.
