Savory steak and eggs with seasoned potatoes, onions, and cherry tomatoes, perfect for any meal.
Ingredients:
  • 1 beef sirloin steak, sliced
  • 1 pound potatoes, cut into small pieces
  • 1 sweet onion, chopped
  • 4 Eggland's Best eggs
  • 1 cup cherry tomatoes, halved
  • Italian seasoning
Instructions:
  • Preheat a cast iron skillet over medium heat, then sear the steak for 4 to 5 minutes on each side until it reaches a medium doneness of 140 degrees F (60 degrees C when checked with an instant-read thermometer. Transfer the steak to a plate and keep the flavorful drippings in the skillet.
  • Toss potatoes into the skillet and generously season with salt and pepper. Cook, stirring occasionally, until potatoes are perfectly tender, which should take roughly 8 to 12 minutes.
  • Sauté the onion until golden brown and the potatoes are tender, approximately 3 to 5 minutes.
  • Slice the steak and place it back in the skillet over low heat. Create 4 wells in the potato mixture and carefully crack an egg into each well. Sprinkle tomatoes around the skillet, cover, and cook until the egg whites are cooked through but the yolks remain runny, which should take about 6 to 12 minutes.
  • Season eggs generously with a pinch of salt, a dash of pepper, and a sprinkle of Italian Seasoning; plate and enjoy.
