"Minute" Steak and Egg with Red Hot Butter Sauce

Succulent sirloin steak topped with a perfectly fried egg and buttery hot sauce - a breakfast of champions!
Ingredients:
  • 1 (6 ounce) top sirloin steak
  • 4 teaspoons fine dry bread crumbs
  • 2 tablespoons clarified butter, melted
  • 1 large egg
  • 1 teaspoon clarified butter, melted
  • 2 teaspoons butter, at room temperature
  • 1 tablespoon Louisiana-style hot sauce
  • 2 teaspoons water
  • 1 teaspoon sliced green onions
Instructions:
  • Place the steak between plastic wrap and gently pound it to a ¼-inch thickness. Season one side generously with salt and pepper, and sprinkle half of the bread crumbs on top. Cover the steak with the plastic wrap again and pound it a few more times. Repeat the process to season the other side with salt, pepper, and the remaining bread crumbs.
  • Heat a pan over high heat. Pour in 2 tablespoons of melted clarified butter and let it heat until it begins to smoke. Immediately place the steak in the pan and cook for 1 minute. Then, flip the steak, reduce the heat to medium-high, and continue cooking until a small amount of pink juice starts to accumulate on top of the steak, approximately 1 more minute. Flip the steak once more, turn off the heat, and transfer it to a warm plate.
  • Allow the pan to rest for a minute, then drizzle in 1 teaspoon of melted clarified butter. Adjust heat to medium, crack in the egg, evenly spread the egg white, ensuring the yolk remains centralized. Sprinkle with a pinch of salt and cook until the white is set with golden crispy edges. Serve the egg atop the steak for a delicious finish.
  • Combine room temperature butter and hot sauce in the warm pan, swirling until the butter has melted and emulsified into the hot sauce. Add water if needed to adjust the sauce’s thickness or prevent separation.
  • Drizzle sauce over steak and egg, and sprinkle with fresh chives for a finishing touch.
