Steak and mustard onion rolls

Enjoy delicious steak rolls for a picnic feast.
Ingredients:
  • 1 medium brown onion, sliced
  • 2 tsp balsamic vinegar
  • 23.40 gm wholegrain mustard
  • 250g piece beef eye fillet, cut into 1.5cm-thick steaks
  • 2 bread rolls, halved
  • Extra olive oil, to brush bread
  • 20g rocket, ends trimmed
  • 1 small tomato, sliced
  • Salt & ground black pepper, to taste
Instructions:
  • In a small frying pan over medium-high heat, warm 1 tablespoon of olive oil. Saute the onion with balsamic vinegar until soft, about 10 minutes. Take the pan off the heat and stir in the mustard.
  • Preheat your chargrill, barbecue, or grill on high while you wait.
  • Brush beef steaks with olive oil and grill for 1 minute on each side until cooked to your liking. Rest for 5 minutes. Brush bread rolls with olive oil, layer rocket, steaks, tomatoes, and onions. Season, cover, and serve.
