Tender strip steak seasoned with dry mustard, pan-fried and served with sautéed mushrooms. Add mushrooms to pan at the end.
Ingredients:
  • 4 (1/2 pound) strip steaks, cut 1/2 inch thick
  • freshly ground black pepper to taste
  • 1 teaspoon dry mustard, divided
  • 0.25 cup margarine
  • 3 tablespoons lemon juice
  • 2 teaspoons minced fresh chives
  • 1 teaspoon Worcestershire sauce
Instructions:
  • Flatten steaks to 1/4 inch thickness, season each side with salt, black pepper, and 1/8 teaspoon mustard, then massage the seasonings into the meat.
  • In a large skillet over medium-high heat, melt margarine. Fry steaks for 2 minutes on each side, then transfer to a hot serving plate. Repeat with remaining steaks.
  • Pour in the lemon juice, chives, Worcestershire sauce, and remaining mustard. Let the mixture come to a boil. Put the steaks back in the pan to warm up and cover them in the flavorful sauce.
