Whip up a quick and delicious Steak Diane, perfect for a cozy date night. Indulge in a mouthwatering pan sauce of mustard, Worcestershire, cream, and cognac. Ready in under 30 minutes!
Ingredients:
  • 4 (6-ounce) center cut beef tenderloin steaks or another cut of your choice
  • Salt
  • 1/2 cup beef broth (see Recipe Note)
  • 4 teaspoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 2 teaspoons tomato paste
  • 1/2 cup finely minced shallots
  • 4 tablespoons cognac or brandy
  • 1/3 cup heavy cream
  • Freshly ground black pepper
  • 1-2 tablespoons chives, finely chopped
Instructions:
  • Season the steak generously with salt and allow it to rest at room temperature for 15 to 30 minutes.
  • Whisk broth, Worcestershire sauce, Dijon mustard, and tomato paste together; set aside.
  • Sear the steaks in butter: Melt butter in a skillet over medium-high heat. Pat the steaks dry with a paper towel and increase heat to high. Sear each side for 1 to 4 minutes based on thickness. Check doneness with an instant-read thermometer (rare: 125°F; medium rare: 135°F; medium: 145°F; well done: 160°F) or the finger test. Rest the steaks on a cutting board tented with foil once cooked.
  • Caramelize the shallots: Once the meat is resting, cook the sliced shallots in the pan on medium-high heat for 2 minutes, stirring occasionally until golden brown.
  • Enhance the flavors: Pour in the cognac to deglaze the pan, raise the heat, and simmer until the cognac is nearly gone.
  • Combine the broth mixture and bring to a boil. Cook until thickened for 2 to 3 minutes. Add the cream and continue cooking for an additional 2 minutes.
  • To serve, optionally thinly slice the steak or keep as individual steaks. Drizzle steak with warm Diane sauce, then garnish with freshly ground black pepper and chives. Enjoy the dish? Please share your rating and review!
