Steak sandwich with balsamic caramelised onions

Elevate your steak sandwich with caramelized onions, rocket, and creamy aioli.
Ingredients:
  • 27.30 gm olive oil
  • 2 brown onions, thinly sliced
  • 20.00 ml balsamic vinegar
  • 400g beef rump steak, trimmed, cut into 4 even portions
  • 79.20 gm bought aioli
  • 4 rustic bread rolls, split
  • 2 tomatoes, sliced
  • Oven-baked frozen chips or wedges, to serve
Instructions:
  • In a saucepan, warm 1 tablespoon of oil over medium-high heat. Add the onion and ensure it's well coated in the oil. Lower the heat, cover, and cook for 10 minutes until slightly golden. Uncover, cook for another 5 minutes, stirring occasionally until light golden. Finally, mix in the vinegar and cook for 1 minute more.
  • Gently press steaks flat using your palm. Season with salt and pepper. Warm the rest of the oil in a spacious non-stick skillet over medium-high heat. Cook steaks for 2 minutes on each side for medium doneness, or until desired. Rest for 2 minutes before serving.
  • Spread a generous layer of the aioli onto the bottom half of the bread rolls. Layer with tomato slices, fresh rocket, juicy steak, thinly sliced onion, the rest of the aioli, and finally the top half of the rolls. Accompany with a side of crispy chips or wedges.
