Elevate your sandwich game with a gourmet, succulent schnitzel steak masterpiece.
Ingredients:
  • Olive oil cooking spray
  • 800g sweet potato, peeled
  • 1 egg white
  • 2.50 gm Cajun seasoning
  • 3 brown onions, halved, sliced
  • 60ml olive oil
  • 20.00 ml balsamic vinegar
  • 600g beef schnitzel (4 large pieces)
  • Salt & freshly ground pepper
  • 123.75 gm whole egg mayonnaise
  • 1 bunch rocket, washed, dried
  • 2 tomatoes, thickly sliced
  • 8 slices crusty bread, toasted
Instructions:
  • Preheat your oven to 200°C. Grease two non-stick baking trays. Cut the sweet potato into matchsticks around 8-10cm in length and 1cm wide. Combine in a bowl with the egg white and Cajun seasoning, toss until evenly coated. Spread the matchsticks in a single layer on each tray. Bake for 40 minutes or until they are golden and tender.
  • Cook the onions in oil over medium heat, covered, for 15 minutes. Uncover and cook for an additional 10 minutes. Stir in balsamic vinegar and cook for 2 minutes.
  • Cut each schnitzel in half horizontally. Sprinkle with salt and pepper. Coat a frying pan with oil spray. Cook the schnitzel in batches for approximately 1 minute per side.
  • On 4 slices of bread, slather mayonnaise. Layer on rocket, tomato, 2 pieces of schnitzel, onion, and remaining toasted bread. Serve alongside sweet potato fries.
