Make your own relish instead of using store bought sauce for a healthier choice.
Ingredients:
  • 4 drained canned beetroot slices
  • Olive oil spray
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp mustard seeds
  • 1 x 400g can no-added-salt chopped tomatoes
  • 40.00 ml malt vinegar
  • 16.00 gm brown sugar
  • 4 (about 100g each) beef fillet steaks
  • 8 slices wholegrain bread
  • Baby cos lettuce leaves, to serve
Instructions:
  • Heat a medium saucepan over medium heat and spray with olive oil. Cook the onion for 3-4 minutes until soft, stirring occasionally. Add garlic and mustard seeds, cook for 1 minute until aromatic, stirring constantly.
  • Combine the tomato, vinegar, and sugar in a pot and bring to a boil. Lower the heat and simmer for 10 minutes, stirring occasionally, until thickened. Allow it to cool before using.
  • Flatten each steak to a 5mm thickness using a meat mallet or rolling pin. Heat a large non-stick frying pan over high heat and lightly grease with olive oil spray. Sear steaks for 1-2 minutes per side for a medium cook or until desired doneness. Remove steaks to a plate, cover with foil, and let rest for 2 minutes before serving.
  • Toast the bread in the meantime.
  • Spread a generous layer of lettuce on serving plates, followed by the perfectly cooked steak, flavorful beetroot, and a dollop of tangy tomato relish. Finish off with the remaining bread for a delightful presentation.
